Green Bean and Radish Salad with Dill

This is a great side dish for grilled foods, or a refreshing change of taste when served along roasted meat. To reduce fat and calories, use less olive oil or substitute with low-fat salad dressing or yoghurt.

INGREDIENTS:

700g green beans, cleaned and trimmed
170g bag of radishes
5 tbsp chopped dill
5 tbsp olive oil
3 tbsp balsamic vinegar

PREPARATION:

1. In a large saucepan, cover the beans and radishes with water, bring to the boil and cook for 1 minute.

2. Pour the beans and radishes into a colander and rinse with cold water.

3. In a food processor or by hand, mix the chopped dill with the olive oil and balsamic vinegar and put aside. Place the beans in a large mixing bowl, slice the radishes and add them to the bowl. Toss with dill dressing.

4. This dish can be served as it is with beef, chicken or fish or on a bed of sliced tomatoes.
